Recipe for Wuhan Hot Dry Noodles

【Cooking Noodles】
Alkaline noodles (Hot dry noodles) – appropriate amount


Cooking oil – large amount



【Preparation】


Hot dry noodles – 1 bowl


Salt – 1g


Sugar – 1g


Pepper – 1g


MSG – 1g


Vinegar – 1 spoon


Light soy sauce – 1 spoon


Dark soy sauce – 1 spoon


Pure sesame paste (pre-mixed with sesame oil) – 1 spoon


Chili oil – appropriate amount


Chopped spicy radish (pickled mustard tuber) – appropriate amount


Chopped scallions – small amount



1. Cook fresh alkaline noodles (Hot dry noodles) until 80% done, then drain.


2. Immediately add a large amount of cooking oil and mix well while blowing cool air to cool quickly and prevent sticking.


3. Bring a pot of water to boil again and add the noodles.


4. Remove the noodles once the water returns to a boil.


5. Add salt, sugar, pepper, MSG, vinegar, light soy sauce, dark soy sauce, pure sesame paste, chili oil, chopped spicy radish, and scallions.


6. Quickly toss to mix evenly.
