When first making Hulu noodles, some claim the dough is firmer than dumpling wrappers. I find slightly firm dough easier to handle.
For thickness reference: aim for 1cm or pinky finger width. Always keep dry flour nearby to prevent sticking. Roll dough pieces against a surface using your thumb – this creates the characteristic shape. Beginners may start with one test piece for reference. Note: I substituted tomatoes with carrots for color. Smaller carrot pieces cook faster. Always wash and drain vegetables beforehand. Cooking steps: 1. Boil noodles until they float, then drain 2. Sauté garlic/ginger in hot oil 3. Add carrots first (longer cooking time) 4. Include other vegetables when carrots soften 5. Add salt during cooking 6. Incorporate greens and pre-cooked noodles last 7. Stir-fry over medium heat
