Stir-Fried Hawthorn Recipe

The Light Snow solar term has arrived, and the ginkgo leaves lining the streets have turned golden. Candied hawthorn sticks and stir-fried hawthorn are the quintessential seasonal snacks in northern China during this time.


Making stir-fried hawthorn at home is simple and convenient. On a sunny afternoon, enjoy a small bowl of chilled stir-fried hawthorn from the refrigerator—its sweet and tangy flavor stimulates the appetite and aids digestion.



Ingredients:


– 600g hawthorn


– 100g granulated sugar


– 80g rock sugar


– 2g salt


– Water, as needed



Instructions:


1. Wash the hawthorn and remove the seeds. Use a pen cap or two pointed stainless steel fruit forks inserted into the top and stem ends to push out the seeds. Drain the hawthorn and set aside.


2. Heat an enamel cast-iron pot over the stove. Add granulated sugar and stir-fry for 30 seconds.


3. Add the hawthorn and enough water to cover it. Bring to a boil over high heat with the lid on.


4. Once boiling, add rock sugar, reduce to low heat, cover, and simmer for 20 minutes.


5. The finished stir-fried hawthorn should have a vibrant red color and is best enjoyed after cooling.


6. Store the cooled hawthorn in a clean, oil-free sealed container in the refrigerator for later use.
