Ingredients: – 500g finely ground pea powder – 1000g cold water – 1000g hot water – Salt to taste Instructions: 1. Mix the pea powder with 1000g of cold water until well blended. 2. Heat water in a pot to approximately 50°C. If no thermometer is available, test by hand—the water should feel very warm but not scalding. 3. Pour the blended mixture from step 1 into the hot water without turning off the heat. Stir continuously to prevent sticking to the bottom. 4. Add a small amount of salt while stirring. Unsalted mixture tends to be astringent; add just enough salt to eliminate the astringency. 5. Continue stirring until thickened, about 10-15 minutes, then turn off the heat. 6. Pour the pea paste into molds. Any mold, such as square or round, is acceptable—even the pot itself can be used. 7. After cooling, invert the molds to release the jelly. 8. Cut into strips or cubes, then mix with chives, crushed peanuts, meat sauce, sesame oil, soy sauce, and other seasonings. Your delicious pea jelly is now ready.
