Thin noodles 200 grams
Scallions 100 grams
Light soy sauce 60 ml
Cooking oil 80 ml
Dark soy sauce 50 ml
Sugar 30 grams
1. Wash the scallions and cut them into sections. Preferably discard the white parts and keep only the green leaves. Measure the sugar and set it aside in a small bowl.
2. Use a measuring spoon to combine the light soy sauce and dark soy sauce in a small bowl for later use.
3. Heat the oil in a small pot, then add the cut scallion sections. Fry until the scallion leaves turn a scorched yellow color.
4. Add light soy sauce, dark soy sauce, and white sugar.
5. Continue cooking over low heat until bubbles appear on the surface, then turn off the heat.
6. Boil the noodles in hot water until cooked, then drain. Pour the prepared scallion oil over the noodles and serve.
