1. Mix the meat filling with beaten egg, chopped scallion, and minced ginger until evenly combined.
2. Cut the eggplant into double-cut slices (first slice not cut through, second slice cut through).
3. Stuff the meat filling into the eggplant slices.
4. Coat the stuffed eggplant slices with dry starch to reduce oil absorption during frying.
5. Deep-fry in oil until golden brown.
6. Remove from the oil and serve.
