2. Cut the side ingredients into desired shapes.


3. Cut all chicken giblets except the kidneys into pieces.


4. Heat oil in a wok, sauté aromatics and spices. Spices can include bay leaves, or substitute with thirteen-spice blend or five-spice powder.


5. First add chicken gizzards, hearts, and intestines to the wok. Stir-fry briefly, then add remaining ingredients. Drizzle dark soy sauce for coloring.


6. When nearly done, add green and red pepper chunks. Drizzle light soy sauce, salt, and Sichuan pepper oil. Stir evenly and remove from heat. Garnish with chopped cilantro before serving.
