1 whole young chicken

Cut the chicken into small pieces, marinate with soy sauce, salt, MSG, and cooking wine for at least 30 minutes. Heat an appropriate amount of cooking oil in a wok until it reaches 70% heat, then add the marinated chicken pieces and stir-fry. (If young chicken is unavailable, three-yellow chicken can be used as a substitute.)
2. Fry until golden brown, then remove and drain the oil.
3. Wash dried red chili peppers and cut into sections.
4. Add a small amount of oil to the pot over high heat, then stir-fry dried red chili peppers and Sichuan peppercorns until fragrant.
5. Add the chicken pieces and stir-fry quickly until evenly combined.
6. Plate and serve.
