Steps to Make Tianjin-Style Shaomai with Bacon and Glutinous Rice

Glutinous Rice 250g
Bacon 150g


Flour 150g


Soy Sauce 3 tablespoons


Salt 1.5 tablespoons


Sugar 1 tablespoon


Hot Water appropriate amount



1. Wash the glutinous rice, add water and soy sauce, then soak for half an hour.


2. Knead the flour with hot water, then set aside for later use.


3. Stir the cooked glutinous rice with a spatula.


4. Dice the bacon into small pieces.


5. Heat a small amount of oil in a pan and stir-fry the bacon bits until fragrant.


6. Add the cooked glutinous rice to the pan. Stir a few times, then turn off the heat. Add salt and sugar, put on disposable gloves, and mix evenly by hand.


7. After finishing, take out the hot-water dough and roll it into a long strip.


8. Cut the strip into small dough pieces, similar to making dumplings.


9. Roll each piece into a shaomai wrapper, as shown in the image.


10. Place the glutinous rice filling onto the wrapper.


11. Gather the edges using the tiger mouth technique to seal.


12. Repeat until all shaomai are prepared. Fill a steamer with water, bring to a boil, place the shaomai inside, and steam for 15 minutes once steam rises.
