1. Briefly dip a Vietnamese spring roll wrapper in warm water.


2. Lay it flat on a cutting board.


3. Place a piece of fresh fish fillet seasoned with a pinch of salt and black pepper slightly below the center.


4. Top with about a dozen Thai basil leaves (or mint leaves).
5. Fold the bottom end upward once.


6. Fold the left and right sides inward once each.


7. Roll upward completely (try to roll it as tightly as possible).


8. After heating the oil in the pan, add the spring rolls and fry them a second time to make them crispier.


9. Dip them in homemade sauce.
