11. Chop the chicken feet into small pieces and set aside. 22. Bring a pot of water to a boil, add rice wine and ginger slices along with the chicken feet. After boiling, reduce to medium heat, skim off the foam, and cook for 8 minutes. 33. Rinse the chicken feet under cold water and soak for 3 hours. 44. In a large bowl, combine ginger, garlic, star anise, cinnamon, bay leaves, cloves, Sichuan pepper, peppercorns, aged pickled peppers, pickled pepper brine, rice vinegar, rice wine, and mineral water to create the pickling marinade. 55. Place the chicken feet into the marinade, cover with plastic wrap, and refrigerate for at least 3 hours.
